“Make your own burrito” bar
Everyone loves burritos‒They’re tasty, they’re satisfying, and they’re versatile. Simply set out fresh ingredients like lettuce, tomatoes, cilantro, bell peppers, and mango; add proteins and grains such as beef, chicken, cheese, quinoa, brown rice, corn, and vegetable hash; and sauces such as store-bought salsa or homemade pico de gallo, guacamole, and refried beans—and watch your friends crowd around! To make things even more irresistible, try grilling the outside of the burritos on the barbecue so they get a good seal on them.
Grilled mexican corn on the cob (elotes)
The combination of flavors may be a bit surprising, but we’re sure you’ll love the result. The recipe is simple: shuck the corn cobs and grill them on the barbecue. When they’re done, cover them with a blend of mayonnaise, sour cream, crumbled cojita or grated Parmesan cheese, and chili spices. Set aside for a few minutes before serving with cilantro and a few lime wedges.
Smoked salmon in 15 minutes
Make your own homemade smoked salmon in minutes! Get out your charcoal barbecue and spread some charcoal in one half. Meanwhile, season your salmon. When the barbecue is ready, spread the salmon on the grill over the half without the charcoal so it’s cooked over indirect heat. To give a woody flavour to your fish, add some cedar chips to the charcoal. Close the top and let the salmon cook for 15 minutes. It’s as simple as that!
Speedy cucumber kimchi
To make this spicy yet refreshing side, cut Lebanese cucumbers in quarters and sweat them with a little coarse salt. After a few minutes, drain the cucumbers and cover them with a mixture of Korean gochugaru (crushed chili peppers), ginger, garlic, and a sweetener of your choice. Set aside for at least 15 minutes before serving.
Zucchini “noodle” salad
Vegetable noodles are an innovative and tasty alternative to wheat-based pasta. A variety of accessories are available for making vegetable noodles, which can be eaten raw or cooked. To make the salad, cut the zucchinis in spirals (we recommend you then cut the spirals with scissors so they’re not too long), and then add pesto, fresh bocconcini, black olives, sundried tomatoes, and ground black pepper. Quick and easy!
A great American classic that’s delicious and easy to personalize. You can opt for a more traditional mix (salsa, sour cream, green onions, black olives, grated cheese, etc.) or go for something different like mango salsa, hummus, and whatever else you think might be tasty. You can use corn chips for dipping, or pita bread chips if you want something a bit healthier.
Brazilian grilled pineapple
Your guests with a sweet tooth will love this Brazilian barbecued dessert. It’s simple to make and only requires three ingredients. Slice the pineapple in rounds and cover them with a mix of brown sugar and cinnamon. Make sure the slices are well coated, then grill them a few minutes on the barbecue until caramelized.
