What could be better than lying around the pool with friends? Here are delicious recipes to delight your guests at your next pool party!
Everyone loves burritos‒They’re tasty, they’re satisfying, and they’re versatile. Simply set out fresh ingredients like lettuce, tomatoes, cilantro, bell peppers, and mango; add proteins and grains such as beef, chicken, cheese, quinoa, brown rice, corn, and vegetable hash; and sauces such as store-bought salsa or homemade pico de gallo, guacamole, and refried beans—and watch your friends crowd around! To make things even more irresistible, try grilling the outside of the burritos on the barbecue so they get a good seal on them.
The combination of flavors may be a bit surprising, but we’re sure you’ll love the result. The recipe is simple: shuck the corn cobs and grill them on the barbecue. When they’re done, cover them with a blend of mayonnaise, sour cream, crumbled cojita or grated Parmesan cheese, and chili spices. Set aside for a few minutes before serving with cilantro and a few lime wedges.
